Dr Oz & Rachael Ray: How to Roast Tomatoes

Ingredients:

24 ripe organic vine tomatoes or large plum tomatoes

Several cloves garlic, crushed

Extra virgin olive oil, for liberal drizzling

Directions:

1.  Preheat your oven to 500 degrees F.

2.  Place your tomatoes onto a cookie sheet in a single layer (with no tomatoes overlapping).

3.  Sprinkle the garlic throughout the tomatoes.

4.  Drizzle the cookie sheet with extra virgin olive oil and sprinkle with some salt and pepper to season.

5.  Roast the tomatoes for about 30 minutes or until they pop and the skin splits back and starts to char.

6.  Let the tomatoes cool so that you can peel them.

7. Voila, roasted tomatoes that is great in any tomato sauce or even just in a salad or on a sandwich.
