Dr Oz & Rachael Ray Chicken Stock Recipe with Cheese Rind


1 large rind trimmed from a hunk of Parmigiano-Reggiano cheese or a few small pieces rind

Herb bundle of several sprigs each fresh thyme, parsley and rosemary, tied

1 onion, peeled and quartered

2 ribs celery, sliced on angle

2 carrots, sliced on angle

Peeled rind of 1 lemon

2 fresh bay leaves

4 cups chicken stock

12 cups (3 qts) water


1.  Put all of your ingredients (the herb bundle, onion, carrots, celery, cheese rind, lemon rind, water, bay leaves and chicken stock) into a big stock pot and bring it to a boil.

2.  Reduce the heat to a simmer and cook for an hour.

3.  Strain out the rinds, herbs and vegetables with a strainer (or I like to use a cheesecloth in a strainer for a very clear and clean stock).

4.  Use the chicken stock for soups, sauces or other recipes.
