Doctor Oz brought on three ladies to compete in a game of Healthy Top Chef, where Tom Colicchio was the judge of their three dishes.  Dr Oz told each lady that they only had 2 minutes and could only cook in the microwave.  One lady made a vegetarian dish that was a mixture of sweet potatoes, spinach and mushrooms.  Tom Colicchio said that he would have microwaved the sweet potatoes for a little bit longer, and seasoned the spinach and sweet potatoes a little bit more, but this recipe is a good starting point for us to play with!  Here are links to all of the recipes from this segment of Dr Oz: Microwave Omelet Recipe, Healthy Pizza Recipe, and Sweet Potatoes, Spinach & Mushrooms.

Dr Oz: Sweet Potato, Spinach & Mushroom Recipe


1 sweet potato, chopped
Baby spinach
Olive oil
Cayenne pepper

Dr Oz: Microwave Recipes


1.  Put your mushrooms and sweet potatoes in a microwave-safe bowl.

2.  Season the sweet potatoes with cinnamon and nutmeg to taste (she did not give any specific measurements, but I would start with a tsp or less of each and then increase as you find necessary).

3.  Place spinach into the bowl and season with cayenne pepper, to taste.

4.  Microwave on high for two minutes, or until the sweet potatoes or cooked all the way through.
