Dr Oz’s Best Of The Best show included a segment with TLC’s DC Cupcake Girls.  They taught Doctor Oz how to make delicious Mini Carrot Cupcakes that have just 50 calories each!  So that means you could even splurge and have two cupcakes and you will only have consumed 100 calories.  The secret is in doing substitutions like applesauce for butter and fat free cream cheese for regular cream cheese in the icing.  And if carrots are not your thing, you can simply substitute apples for the carrots and voila, you have an Apple Cupcake Recipe that is just 50 calories a piece!

Dr Oz: Mini Carrot Cupcake Recipe


3/4 cup all-purpose flour

1 1/2 tsp baking powder

1 tsp ground cinnamon

1/4 tsp salt

4 tbsp all-natural unsweetened applesauce

1/4 cup clover honey

2 small eggs

1/4 cup warm water

1 cup freshly, finely grated carrots (carrots can be substituted with grated apple to make apple cupcakes instead).

1 tbsp unsalted butter

4 tbsp fat-free cream cheese

3/4 cup confectioner’s sugar

1/4 tsp pure vanilla extract

Dr Oz: Carrot Cupcake Recipe


1.  Preheat the oven to 350 degrees.

2.  Place 24 mini baking cups into  your mini cupcake sheet.

3.  Mix together all of the dry ingredients in one bowl.

4.  Into your mixer’s bowl, add the honey and applesauce.  Mix for a few seconds on medium speed.

5.  Lower the speed to “low” and add your eggs one by one.

6.  Slowly add in half of the dry ingredients.  Then add half of the water.  Keep alternating until all of the dry ingredients and water are well incorporated.

7.  Add the grated carrots or apples to the mixer.

8.  Fill the baking cups equally with the batter.

9.  Bake for around 20 minutes or until it is cooked all the way through.

10.  While the cupcakes are baking, you can make the icing by beating together the cream cheese, butter, sugar, and vanilla extract for 3-4 minutes.

11.  Let the cupcakes cool and then ice them with the icing that you made in step #10.
