Dr. Oz & David Held’s Recipe For Whole Wheat Matzo Balls and Chicken Soup
Ingredients:
– 1 container (48 ounces) low sodium chicken broth
– 1 bunch Italian parsley
– 1 bunch dill
– 1 bag (8 ounces) of carrots
– 4 parsnips, peeled
– 1 onion, peeled (don’t cut!)
– 4 stalks celery
– 32 ounces cold water
– 1 package chicken breasts
– 1 package whole wheat matzo ball mix
– salt and pepper
Directions:
1. Mix together all of the ingredients (except for the whole wheat matzo ball mix) in a large pot.
2. Heat the warm pot over medium heat until it comes to a boil.
3. Reduce the heat and simmer for 45 minutes or until the chicken is cooked.
4. Follow the directions on the whole wheat matzo ball mix package, but use egg substitute instead of regular eggs. Add a little seltzer or club soda to the whole wheat matzo balls to lighten them up.
