Dr Oz has been promoting his 500 Calorie Healthy Dinner Club, which is where everyone in America is supposed to try to make dinners that are 500 calories for themselves and their families.  Doctor Oz did an Iron Chef move and gave one of his loyal watchers a secret ingredient to use in a 500 calorie dinner meal.  And she came up with a cranberry meatloaf recipe.  I am not 100% sure how this will taste, but I do tend to like sweet mixed with savory, so I will give it a try… anything to lose weight and eat yummy food!

Dr Oz’s Cranberry Meatloaf Recipe

Ingredients:

– 1.5 lbs lean ground beef
– 1/3 cup dried cranberries
– 1 egg
– 1/4 cup skim milk
– 1/2 cup ketchup
– 2 tbsp of mustard
– 1 tsp oregano
– 1 tsp garlic salt
– 1/4 of yellow onion
– 1/4 cup Italian breadcrumbs
– 1 can tomato soup
– 1/2 can water

Directions:

1.  Preheat your oven to 375 degrees.

2.  Cut your onion into a small dice.

3.  Heat a frying pan and add a tsp of olive oil.

4.  Cook the chopped onions until light brown in color.

5.  In a big bowl, mix together the ground beef, eggs, milk, mustard, ketchup, oregano, breadcrumbs and garlic salt.

6.  Dr Oz’s website said to mix the cooked onions into the meatloaf, so you can do that now if you want… or you can do what Amanda did on the show, which was to put the onions on top.  I’d prefer them mixed in I think.

7.  Mix all of the ingredients well and then form a meatloaf shape out of the mixture.

8.  Place the meatloaf in a oven safe dish, and cover it with 1/2 can of water and a full can of tomato soup.

9.  Cook for 45 minutes to an hour, watching to make sure it does not burn.
