Dr Oz gave a great substitution for one of my favorite dishes – mashed potatoes.  Instead of using potatoes though, Doctor Oz used parsnips.  I remember the first time that I had parsnips at a restaurant and I had no idea what the vegetable was so I had to ask the waiter because I loved it so much.  I cannot wait to try Dr Oz’s Parsnip Mash Recipe!

Dr Oz: Parsnip Mashed Potatoes Recipe

Ingredients:

1 lb parsnip roots, trimmed, peeled and cut into large chunks

1 wedge light garlic & herb cheese

Salt and pepper

4 tbsp chopped chives

Directions:

1.  Steam the parsnips until they are tender, which takes about 15-20 minutes.  If you do not have a vegetable steamer, I highly recommend getting a collapsible strainer that also serves as a steam like this one: Rosle Collapsible Colander Review.

2.  Move the parsnips into a blender and add the wedge of light cheese, which my favorite brand is Laughing Cow cheese.

3.  Purree the mixture until it is creamy, like mashed potatoes.

4.  Sprinkle chives on top and then serve warm!
