Dr Oz was joined by the Deen Brothers – Jamie Deen and Bobby Deen, authors of The Deen Bros. Take It Easy: Quick and Affordable Meals the Whole Family Will Love, who held the Deen Brother’s Search for the Unhealthiest Cook in America. Doctor Oz and the Deen Brothers chose Vita, who is the queen of fried foods. Jamie Deen and Bobby Deen gave Vita the following Un-Fried Chicken Recipe that tastes like fried chicken, but without all of the extra calories and fat.
Dr Oz Un-Fried Chicken Recipe

8 skinless boneless chicken thighs, trimmed of all visible fat (about 1 1/2 lbs)

1/4 cup light mayonnaise
Zest and juice of 1 lemon
1 egg white
1/2 tsp hot sauce
1 1/4 cups cornflake crumbs
Deen Brothers Un-Fried Chicken Recipe
Directions:
1. Preheat your oven to 375 degrees F.
2. Spray a baking pan with non-stick spray.
3. Place your pieces of chicken into a ziploc bag.
4. Mix together the house seasoning, mayonnaise, lemon zest, juice, hot sauce and egg whites.
5. Toss the marinate into the ziploc bag of chicken and shake it around to coat all of the pieces of chicken well.
6. Pour the cornflake crumbs into a bowl.
7. Dip each piece of chicken into the cornflake crumbs.
8. Place the pieces of chicken onto your pan covered in nonstick spray.
9. Bake the chicken for 40-45 minutes or until it is golden brown and cooked all the way through.
As a side note – I have done something similar with Fiber One Cereal crushed up instead of corn flakes, and it tasted great, plus my family got the added benefit of some extra fiber!

I have a recipe for baked chicken which I think is pretty tasty.
use boneless breast or if you like the whole chicken leg use that. Wash chicken well and take skin off. 3 cups of pure oat bran, 2tbs of powdered garlic, ginger and turmeric and dill, 1 tbs of rosamary and marjarom, a couple pinches of pepper, mix together all very well dip wet chicken into mixture on a plate or in a baggie, put a little olive oil in a baking pan an smear around with your hand. put chicken in pan and bake at 350 degree about 45 minutes to 1 hour depending on size of pieces of chicken. You may use salt if you want to but I don’t use salt. If any leftover mixture refrigerate for up to two weeks. This is really delicious.
