Dr Oz’s $5 Healthy Meal Challenge was a competition between two ladies for the best healthy meal recipe for under $5 per serving.  And the winner was Elizabeth Rekowicz for her Chicken Roll-Up Recipe.  Elizabeth said on Doctor Oz’s Show that you can do many variations on this recipe if you or your children do not like ham and swiss cheese.  For example, how about cheddar and broccoli?  Or diced olives and sundried tomatoes?  Leave a comment below with your favorite flavor combination for these Chicken Roll-Ups, and lets inspire each other!

10.  Bake for 15-20 minutes.

11.  During the last few minutes of baking, change your oven to the “broil” setting and move it to the top of the oven.  Cook for an extra 1-2 minutes until the breadcrumbs get nice and golden brown.
