Dr Oz was joined by the Kitchen Diva, Angela Medearis – author of The Kitchen Diva Cooks!, on the Dr Oz Show today.  The Kitchen Diva demonstrated her Healthy Chicken Pot Pie Recipe.  My husband absolutely LOVE chicken pot pies, but I never make it for him because they are just so bad for you!  Dr Oz’s Chicken Pot Pie Recipe has 350 calories and 5 grams of fat per serving – compared to the usual Chicken Pot Pie Recipe which has 1000 calories and 20 grams of fat per serving.  What a big difference!

Dr Oz & Kitchen Diva’s Chicken Pot Pie Recipe

Ingredients:

2 tbsp heart-healthy butter blend

2 tbsp olive oil

1/2 cup chopped onions

2 clove garlic, minced

2 tbsp poultry seasoning

1/2 tsp salt

1 tsp pepper

1 tsp coarse, grainy mustard

1/2 cup flour

2 cups low-fat, low-sodium chicken stock

2 cups water

1 tsp Worcestershire sauce

1 1/2 cups (1/2-in) diced, peeled sweet potatoes

1 cup diced cooked chicken

3 cups cooked, fresh vegetables or 2 cups frozen vegetables

2 cups reduced fat all-purpose baking mix

1 cup buttermilk

1 egg

Butter-flavored cooking oil spray

Directions:

1.  Melt the butter and olive oil together in a pan over medium heat.

2.  Mix in the onions, garlic, 1/2 tsp of salt and pepper, mustard and 1 TB poultry seasoning.  Cook for a few minutes until the onions soften.

3.  Stir the flour into the pan and mix constantly for a couple of minutes.  This is crucial, or else you will get a lumpy sauce!

4.  Slowly mix into the sauce the stock, Worcestershire Sauce and the water.  Mix until smooth.

5.  Bring the sauce to a boil and mix in the sweet potatoes.

6.  Cook the sweet potatoes on low heat for about 6-10 minutes or until they are soft.

7.  Mix in the chicken and vegetables.

8.  Pre-heat your oven to 400 degrees (although on the tv show, the Kitchen Diva said she does it a t 350 degrees).

9.  In a separate bowl, mix together the buttermilk, egg, baking mix and 1 TB poultry seasoning.

10.  Place the chicken, vegetables and sauce into a baking dish.

11.  Spoon the batter mixture on top of the chicken and vegetable mixture.

12.  Bake for 30 minutes or until it is golden brown and delicious!
