Dr Oz’s $5 Healthy Meal Challenge was a competition between two ladies for the best healthy meal recipe for under $5 per serving. Click here for the winning recipe from the Doctor Oz Show, which was the Chicken Roll-Up Recipe. The recipe below was the runner-up from Dina Siegel and it is a delicious combination of a baked chicken cutlet with a side of sauteed kale, which is rich in iron and absolutely great for you.
Dr Oz: Chicken Cutlet & Sauteed Kale Recipe
Ingredients:
4 chicken cutlets pounded very thin
4 oz Italian bread crumbs
2 heads of dinosaur kale, stems and ribs removed, leaves chopped
1/3 oz garlic powder
1 lemon
4 oz skim milk
5 cloves of garlic
Olive Oil
Parmesan cheese, freshly grated
Salt and pepper
Dr Oz: Sauteed Kale & Chicken Cutlet Recipe
Directions:
1. Dip each chicken breast into a bowl of skim milk.
2. Then press the chicken breast into a bowl of Italian bread crumbs mixed with grated Parmesan cheese.
3. Bake the chicken at 350 degrees for around 20 minutes or until it is cooked all the way through.
4. You can squeeze lemon juice over each piece of chicken to finish it off – though I would think that this would make it soggy, no?
5. In a saute pan, heat up the olive oil and cook the 5 whole cloves of garlic until light brown.
6. Add to the pan the kale (after washing it thoroughly of course!).
7. Sprinkle a little salt and pepper and top and let it cook for 10-15 minutes.
8. Serve the chicken cutlets with a nice scoop of sauteed kale on the side.
