Dr Oz: Grapefruit & Jicama Salad Recipe

Dr Oz did a segment called 5 Minute Miracles to Fight Fat, and one of his guests was Iron Chef Cat Cora, author of Cat Cora’s Classics with a Twist: Fresh Takes on Favorite Dishes.  She gave Doctor Oz a Flat Belly Salad Recipe that will help all of us to lose weight, without sacrificing the flavor.  Cat Cora’s Grapefruit and Jicama Salad Recipe sounds so refreshing and perfect, especially as we head into the warm summer months.

Cat Cora: Flat Belly Salad Recipe

Vinaigrette Dressing Ingredients:

1 small, thin Serrano chili, diced

1 large garlic clove

3 tbsp fresh lime juice

1 tbsp dark brown sugar

1 ½ tbsp Asian fish sauce

Salad Ingredients:

3 grapefruits, peeled and segmented

1 medium carrot, peeled and shredded

1/3 cup cilantro leaves

3/4 pound jicama, peeled and shredded

2 tbsp crushed, roasted pistachios on top

Cat Cora: Grapefruit & Jicama Salad Recipe

Directions:

1.  Mix together all of the ingredients for the Vinaigrette Dressing with a whisk.

2.  In a separate bowl, mix together all of the ingredients for the salad base.

3.  Toss the salad bowl with the Vinaigrette Dressing.

4.  Serve the salad topped with pistachios and cilantro (as desired).
