Dr Oz did a segment with actress Jennifer Esposito, who has Celiac Disease, on the Dr Oz Show.  People with Celiac Disease have to eat a Gluten Free Diet, but that does not mean that she cannot have scones or other baked goods!  Here is Jennifer Esposito’s Blueberry Walnut Scone Recipe that she made with Doctor Oz:

Dr Oz Gluten-Free Scone Recipe

Ingredients:

1/2 cup brown rice flour

1/2 cup coconut

1/2 cup sorghum flour

1/2 cup tapioca starch

1/2 tsp salt

3/4 tsp xanthan gum

1 tsp baking soda

2 tsp baking powder

1 tsp cinnamon

2 tbsp canola oil

1/2 tsp vanilla

5 tbsp apple sauce

1/2 banana

2 tbsp maple syrup

2 tbsp brown rice syrup

1/3 cup soy, rice, almond or hemp milk

1 cup blueberries

1 cup chopped walnuts or pecans

Dr Oz: Blueberry Walnut Scone Recipe

Directions:

1.  Preheat your oven to 425 degrees F.

2.  Mix together all of the dry ingredients (other than the blueberries and walnuts) in a big mixing bowl.  Make sure that you whisk well so that there are no lumps.

3. In another bowl, mix together the “wet ingredients” (other than the milk).  You can use a mixer on medium speed to mix it well.

4.  Slowly add the wet ingredients into the dry ingredients.  Keep the stand mixer going as you add the ingredients together.

5.  Carefully mix in the walnuts and blueberries.

6.  After lining your baking pan with parchment paper, spoon the mixture onto the pan with tablespoons.

7.  Brush the top of the 20 scones with maple syrup.

8.  Bake for 18 – 23 minutes.
