Doctor Oz brought on three ladies to compete in a game of Healthy Top Chef, where Tom Colicchio was the judge of their three dishes.  Dr Oz told each lady that they only had 2 minutes and could only cook in the microwave.  One lady made a delicious Microwave Greek Omelet Recipe, which I thought was such a brilliant way to have a health breakfast in just 90 seconds.  Here are links to all of the recipes from this segment of Dr Oz: Microwave Omelet Recipe, Healthy Pizza Recipe, and Sweet Potatoes, Spinach & Mushrooms.

Dr Oz: Microwave Greek Omelet Recipe


1 egg (or 2 egg whites)
2 tbsp chopped fresh spinach
2 tbsp chopped tomato
2 tbsp feta cheese
Pinch of oregano
Salt and pepper to taste

Dr Oz: Microwave Egg Recipe


1.  Spray a non-stick cooking spray on the inside of a microwave-safe bowl.

2.  Crack your egg(s) into the bowl and scramble it up with a fork.

3.  Add the rest of the ingredients and mix well.

4.  Microwave the bowl of food for 60 seconds on high, or until the egg is fully cooked.

You can also make other variations of this Microwave Omelet like a Mexican Omelet with peppers and spicy cheese or an Italian Omelet with basil and mozzarella.
