Dr Oz: Cream of Carrot Soup Recipe

Doctor Oz had a guest on the Dr Oz Show who made a healthy version of a Cream of Carrot Soup, and the secret ingredient was rolled oats.  What a fabulous idea for thickening soups or for making a soup seem creamy without adding all of the extra fat found in cream.  I cannot wait to try this method on a variety of different soups.  I have never actually had (or heard of) Cream of Carrot Soup, but I will be definitely trying this out!

Dr Oz’s Recipe For Healthy Cream of Carrot Soup

Ingredients:

2 tbsps Extra Virgin Olive Oil
1 large onion cut into medium dice
1/2 tsp sea salt
2lbs carrots, peeled and cut into 1/2 inch rounds
5 cups of vegetable stock
1/4 cup rolled oats
1 1/2 tsp ginger juice
1 tsp lemon juice
Salt and pepper to taste
Garnish with 2 tsp of dill and dollop of plain yogurt

Directions:

1.  Heat the oil in a pot and cook the onions and salt for 5 minutes.

2.  Add the carrots to the pot, cover the pot, and cook for another 5 minutes over low heat.

3.  Add the vegetable stock and the rolled oats to the pot, and bring it to a boil.

4.  After the pot is boiling, reduce the heat and simmer for 25 minutes.

5.  Smooth the soup out with a blender (or an immersion blender would be the easiest).

6.  You can add more stock if you want a more liquidy soup.

7.  Add the lemon and ginger juices and season as you prefer.
