Doctor Oz and Harley Pasternak, author of The 5-Factor Diet, gave a few creative oatmeal recipes for making 3 recipes with one ingredient: oatmeal! Oatmeal can help lower cholesterol and is delicious in the morning with just a touch of brown sugar and dried fruit, but I love these creative ways to use oatmeal in other recipes too!
Dr Oz & Harley Pasternak’s Apple Cinnamon Frittata Recipe
Ingredients:
4 egg whites (from carton)
2 cups rolled oats
2-3 tbsp diced dried apples
1 tsp cinnamon
2 tbsp unsweetened, natural applesauce (for garnish)
Directions:
1. Spray non-stick baking spray on the inside of a microwave safe bowl.
2. Put the egg whites in the bowl and mix in the oats, cinnamon and dried apples.
3. Cover the bowl with plastic wrap, but leave a small vent on one side so the steam can come out
4. Microwave for 3-4 minutes. Serve with applesauce on top.
Another option is to cook this dish in a frying pan like a pancake. I can imagine many fun variations – cranberry & pecan for example instead of apple and cinnamon. I wonder if fresh apples would work instead of dried apples? I will have to try it out. I love oatmeal recipes that help you to lose weight!

Just made this.. whithout dries apples since i didn’t have any.. added some artificial sweetner in the mix and fried it like pancakes.. heated natural apple sauce and dipped the pancakes in it! YUM!

How to ruin food–use a microwave. Changes the chemical composition from what you’d get cooked other ways. Not something I even have in my house. Better to use an oven, and I’d like to try the recipe if someone would post an alternative to microwaving.
