Roasted Imo Potato Recipe – Imo the Superfood!
Dr Oz recently named Imo as a Superfood, because Imo is packed with beta carotene and has more antioxidants than blueberries. There are very few Imo Recipes or even ideas for How To Cook Imo online, so I did a little experimenting and came up with a delicious Roasted Imo Potato Recipe! Imo is not really a potato per-se, but you can do just about anything with it that you can do with a potato or sweet potato. You can bake Imo like a baked potato, you can thinly slice Imo and roast them to make Imo Chips (which I also love to do with sweet potatoes to make Sweet Potato Chips). The one thing I haven’t tried yet is to make Mashed Imo, like mashed potatoes – but I can just imagine how much kids would love a blue / purple colored mashed potato dish! Imo is a deep rich blue or purple color, which is probably where it gets all of its antioxidants and vitamins.
Roasted Imo Potato Recipe
Ingredients:
- 2 cloves garlic, crushed
- 3 large (or 5 small) Imo Potatoes
- 2 TB olive oil
- salt & pepper, to taste
Directions:
1. Preheat the oven to 350 degrees.
2. Coat the bottom of a glass dish with olive oil (just enough to coat the pan, don’t overdo it!).
3. Wash and peel the Imo.
4. Cut the Imo into 1 1/2 inch pieces.
5. Place the Imo in the glass dish and toss to cover them in olive oil.
6. Sprinkle the salt, pepper and crushed garlic on top of the imo.
7. Bake for 45-60 minutes or until soft. I usually bake it for the first 30 minutes covered, and then bake the Imo for the rest of the time uncovered, because I like my Imo a bit crispy.
