Lemon Butter Barramundi Fish Recipe

Dr Oz named Barramundi Fish as his number one superfood, but how do you prepare barramundi?  After not being able to find too many Barramundi Recipes online, I did a little experimenting and came up with the following Barramundi Recipes:

Barramundi only eat plankton, so they are not as high in mercury as other fish, however Barramundi still have the heart and brain healthy Omega 3′s that we all want.  I have had a little difficulty getting my hands on Barramundi.  If you live on the east coast, I have found Barramundi at Stew Leonards.  I heard that certain Costco’s also carry Barramundi, but so far I have not found it at mine.

Lemon Butter Barramundi Fish Recipe

Ingredients:

- 4 Barramundi fillets

- 2 tsp olive oil

- 2 TB butter

- 1 clove garlic, minced

- 3 TB lemon juice

- 5 basil leaves, minced (or 3/4 dry basil leaves)

- Salt to Taste

Directions:

1.  Saute over medium heat the garlic in the butter for a couple minutes.

2.  Add the lemon juice and basil to the garlic butter.

3.  Add salt (to your taste).

4.  Remove the sauce from the heat and put it on the side.  I usually cover it to keep it warm while I cook the fish.

5.  Coat the Barramundi Fillets with olive oil and fry in another pan on high heat for 3 minutes on the first side, and then 1-2 minutes on the second side (or until the fish is cooked through).

6.  Serve with the sauce spooned on top.  I love to serve this dish with some faux mashed potatoes (made of cauliflower) and a little salad with red peppers or red tomatoes for a bit of color.
