Blackened Barramundi Sandwich Fish Recipe

Dr Oz named Barramundi Fish as his number one superfood, but how do you prepare barramundi?  After not being able to find too many Barramundi Recipes online, I did a little experimenting and came up with the following Barramundi Recipes:

Barramundi only eat plankton, so they are not as high in mercury as other fish, however Barramundi still have the heart and brain healthy Omega 3’s that we all want.  I have had a little difficulty getting my hands on Barramundi.  If you live on the east coast, I have found Barramundi at Stew Leonards.  I heard that certain Costco’s also carry Barramundi, but so far I have not found it at mine.

Blackened Barramundi Sandwich Recipe

Ingredients:

- 4 Barramundi fillets

- 4 TB butter

- 1 baguette

- coleslaw or tartar sauce (to taste)

- 2 TB sweet paprika

- 4 tsp kosher salt

- 2 tsp garlic powder

- 2 tsp onion powder

- 1/8 tsp cayenne pepper

- 1/2 tsp red pepper flakes

- 1/2 tsp cumin

- 1 1/2 tsp white pepper

- 1 1/2 tsp black pepper

- 1 tsp dried oregano

- 1 tsp dried thyme

Directions:

1.  Warm up your grill.

2.  Mix the spices in a bowl.

3.  Split your baguette into 4 different sections and split it in half.

4.  Put the butter in a frying pan and melt.  Remove from heat.

5. Put each baguette (inside face down) in the pan just  until it can get covered in butter.

6.  Repeat with the barramundi fillets.  Put each fillet in the pan just  until it can get covered in butter, remove fillet (you do not want to cook the barramundi in this phase).

7.  Sprinkle the spice mixture all over the barramundi fillets to cover both sides.

8.  Grill the Barramundi fish for 2-4 minutes per side.

9.  Serve the Barramundi fish on the buttered baguette with the coleslaw or tartar sauce.
