Dr Oz: Quinoa Pudding Recipe – Diet Dessert Recipe!

Doctor Oz gave a recipe for a Quinoa Pudding to Steve, the Unhealthiest American.  Both Dr Oz and Steve said the Quinoa Fruit Pudding tasted sweet and delicious, but when I made it, my husband and I were not terribly impressed.  I really want to figure out a way to make a delicious dessert pudding with quinoa, which is rich in protein, but I’m struggling.  Do you have any idea?  Please leave a comment below!  I am thinking about next time making low fat chocolate pudding, and then mixing in some cooked quinoa… kind of like a healthy, high in protein, chocolate rice pudding.

Dr Oz’s Recipe for Quinoa Pudding

Ingredients:

1 cup organic quinoa

2 cups boiling water

1/2 cup dried cherries

1/2 cup dried cranberries

1/2 cup unsweetened apple juice

2 bananas

1 tsp grated orange rind

1 tsp vanilla

1/2 tsp cinnamon

Directions:

1.  Rinse quinoa well in water.

2.  Bring water to a boil, and add in the quinoa.  Let the quinoa simmer for 7 minutes.

3.  Add the dried fruits to the quinoa and simmer for 5-7 minutes so that it absorbs the liquid.

4.  Puree the rest of the ingredients in a food processor.

5.  Mix together the quinoa and the puree.

6.  Chill and serve the Quinoa Pudding!
