Fat-Free Sun Dried Tomato Salad Dressing Recipe
One of my favorite ways to eat salads is to top it with some chickpeas and sundried tomatoes… so I thought, why not sun-dried tomato salad dressing? It has become one of the favorite (and healthiest) salad dressings around my house!
Sun Dried Tomato Salad Dressing Ingredients:
- 2 TB Chives, finely chopped
- 1/4 tsp Red Pepper Flakes
- 1/3 cup Rice Vinegar
- 1/4 cup Water, Boiling
- 1/4 cup Sun Dried Tomatoes, Chopped
Sun Dried Tomato Salad Dressing Directions:
1. Pour the boiling water into the container of a food processor or blender and add the sun dried tomatoes. Let it rest for a few minutes, because this will soften up and re-hydrate the sun dried tomatoes a bit.
2. Add the rice vinegar and red pepper vinegar to the food processor or blender, and puree until its smooth.
3. Add in the finely chopped chives. You don’t want to blend the chives into the mixture because they add nice color, flavor and texture just like this.
4. Shake well and serve over a salad or even some steamed vegetables.
