  • 4 kiwis, peeled and diced
  • 2 firm ripe bananas, cut diagonally into 1/2-inch-thick slices
  • 1/2 cup diced red bell pepper
  • 2 tablespoons thinly sliced fresh mint
  • 2 tablespoons chopped cashews

Kiwi Salad Directions:

  • Whisk lime juice, oil, shallot, vinegar, honey, salt and cayenne in a medium bowl. Add kiwis, bananas, bell pepper and mint; toss to coat. Serve sprinkled with cashews.

Kiwi Smoothie Recipe

The recipe below is for a kiwi-apple smoothie with about 204 calories. Although the calories are in the 200s, the amount of other nutrients you will get from this smoothie is tremendous. You will get around 300 percent of the vitamin A and vitamin C you should get in one day.

  • 2 kiwis
  • 1 apple

  • Blend all the ingredients together until smooth.
