Dr Oz & Rocco’s Healthy Mayonnaise with Greek Yogurt

Doctor Oz brought Chef Rocco DiSpirito onto his show to teach how to make Man Snacks Made Healthy.  This healthy mayonnaise recipe is made of Greek yogurt and is a great ingredient to use in the dip for these Faux Fried Onion Rings Recipe.  I cannot wait to make chicken salad with this healthy faux mayonnaise!

Healthy Mayonnaise with Greek Yogurt Recipe

Ingredients:

6 tbsp white vinegar

4 tbsp cornstarch

1 (17.6-oz) container Greek yogurt

3 tbsp Dijon mustard

4 packets (14 g) calorie-free sweetener

1 tsp salt

Directions:

1.  Whisk together the cornstarch and white vinegar.

2.  Add 2/3 cup of yogurt to the vinegar mix and whisk well.

3.  Move the yogurt and vinegar mix into a pan and cook over high heat while constantly whisking the mixture, until it begins to boil.

4.  After the mixture gets thick, put it into a food processor.  Blend for 1 minute.  Scrape down the sides and blend for another 3 minutes.

5.  Add the rest of the yogurt, the mustard, the salt and the sweetener.  Blend for 1 minute, scrape the sides again and blend for 30 more seconds.

6.  Put the healthy mayo for 2 hours until cold.  You can store this for up to 1 week in the fridge.
