Dr Oz & Rocco’s Faux Fried Onion Rings Recipe

Doctor Oz brought Chef Rocco DiSpirito on his show to teach how to create Man Snacks Made Healthy.  Everyone loves onion rings, but they are so oily and greasy when you deep fry them.  Why not try Rocco’s Faux-Fried Onion Ring’s recipe instead which is basically a Baked Onion Rings recipe using whole wheat Panko crumbs and whole wheat flour.  I am definitely going to try making these Faux-Fried Onion Rings for my husband!

Rocco’s Faux-Fried Onion Rings Recipe

Ingredients:

4 large Vidalia onions cut into 1/2-in thick slices

2 cups skim milk

2 cups whole wheat flour

2 cups whole wheat panko breadcrumbs

4 large egg whites

Salt and freshly ground black pepper

Non-stick cooking spray

3/4 cup Rocco’s Healthy Mayonnaise or store-bought reduced-fat mayonnaise

1 tbsp liquid smoke

Directions:

1.  Separate the onion slices so that you have individual onion rings.  If you use only the largest rings, you will be left with around 20 rings.  Use the other smaller onion rings for another recipe.

2.  Soak the onion rings in milk for 20 minutes, and turn the rings over half way through so that all of the onion gets soaked in the milk.

3.  Preheat your oven to 425 degrees.

4.  Put the flour in one dish and the panko crumbs in another dish.  In a bowl, whip up the egg whites until they are very foamy, but not to the point where it has stiff peaks.

5.  Move the onion rings from the milk, to the flour, then into the egg whites, and finally into the panko crumbs.

6.  Place the onion rings on wire racks and spray with cooking spray.  Sprinkle some salt and pepper on top of the onion rings.

7.  Cook for 10-20 minutes.

8.  Mix the mayonnaise with the liquid smoke and serve with the Baked Onion Rings!
